Meal Prep - Week 1

Meal prep week 1 was a bit of a jump all in and take the risk as quite honestly we weren't 100% sure how to go about it and if it was going to work for us. Meal wise we were being really conscious of trying to pick things we thought might reheat well but not trying to pick anything too adventurous incase we didn't like it. We ended up with a fairly good selection of meals though and by the end of it there was only one that we wouldn't have again.



Lasagna - Something we've obviously had 100's of times and is already one of our faves. We already knew it was a good freezer/reheater so we made sure to pop it in there to play it safe. Just as expected it was absolutely delicious and lasted the week really well. One thing I will say about this is that is does feel like a bigger portion so definitely a tea time meal (for me anyway).

Pork Chops, New Potatoes and Broccoli - Another really nice meal which we have had again since (spoiler)! I was a little worried at first that the pork chop would go dry and inedible but as long as you don't over blast it in the microwave then it's fine! We made our own marinade for these with just some garlic and mixed herbs and then the new potatoes has butter and mint on. The mint was a little much for me so I just don't have that anymore but all in all it was a lovely meal.


Katsu Chicken, Rice and Sweetcorn - Something I wasn't sure I would like but was actually surprised by. Admittingly when we have a meal with rice for some reason the portion always seems a bit overwhelming but nevertheless it's still yummy. With there been no sauce in this meal it is an idea to have a little something with it - for example Kal likes sweet chilli over his rice so it isn't bland.

Tuna Pasta - This is a meal that we obviously don't freeze and just have to make sure we eat in the first 3 days of the week which isn't a problem as you can just eat it on day 1 and 3 if you want to break it up a little. This is an all round favourite and we just pop some mayo in when we're about to eat it and it's delicious. It's also quick and easy which is a bonus!


Tomato and Lime Soup - Another one I was a little unsure of but actually ended up being a nice one. This froze and reheated really well and was a lovely 'dinner' when you didn't want too much. What I will say about this one is I do think it will be one I have to fancy so I don't think we will throw it in the mix too often.

Homemade Chicken Strips and wedges with Carrots - One of my absolute favourites even though it probably doesn't look like much! Kallum made the chicken strips with a BBQ coating and then made salt and pepper chilli wedges and they were the best thing ever! This one is a little more faffy with making your own chicken strips but was definitely worth it! Oh and we threw some carrots in the mix so we were still getting a veg!


Sweet Potato with carrot and cucumber - No thank you. This was my fault but I had seen a lady on TikTok eating cold sweet potato and she was raving about it but it made me feel ill. It was another one you had to leave in the fridge and eat within 3 days and just wasn't nice at all. (The sticks went soggy too!) We managed to salvage ours by taking the batons out, heating up the potato and adding gravy but it still wasn't something we would have again!


So, those were week 1's meal prep meals! Mainly a success - took possibly around 7 hours to make but was our first time and the potatoes themselves took a long time to cook. We also had to pre wash and dry every single container before we used them as they were new so this added an extra time and stress on. While we were making them I never wanted to meal prep again as I was bored and tired but it was all worth it through the week not having to worry about what to have and how long it would take to cook!
